Potato Salad with Fresh Spinach and Lemon Zest

Ingredients
- 800 g small potatoes (firm boiling)
- 800 ml vegetable broth
- 300 g spinach (young, fresh)
- 4 tbsp oil
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- Salt
- pepper (from grinder)
- sugar
- Lemon zest (for garnish)

Wash the potatoes thoroughly and peel them if desired.

Bring the vegetable broth to a boil in a pot. Add the potatoes (they should be covered by the broth) and simmer for about 25 minutes, then drain, rinse with cold water, and let them dry. Cut the potatoes into strips.

Clean the spinach, wash it, spin or shake dry, and tear into bite-sized pieces.

Whisk oil with vinegar and lemon juice, season with salt, pepper, and a pinch of sugar, then fold into the potatoes, letting it sit for about 30 minutes.

Fold in the spinach before serving, arrange on a plate, and sprinkle with lemon zest. Serve.
