Mustard Potato Salad

Ingredients

  • 1 kg small potatoes (firm boiling)
  • 200 g mayonnaise (more to taste, or sour cream)
  • 3 tbsp coarse-grained mustard
  • 1 large red onion
  • 0.5 bunch Chives
  • Salt
  • Pepper

Instructions

    Wash the potatoes thoroughly, place them in a pressure cooker with 250 ml water and cook according to instructions for about 10-12 minutes (or steam over boiling water for ~30 minutes).

    Meanwhile peel the onion and cut into thin half-rings. Wash the chives, shake dry, and slice into fine rings.

    Drain the potatoes, remove from pot, let cool for 5 minutes, then peel. Mix with salad mayonnaise or sour cream, season with salt and pepper, and divide into bowls. Sprinkle with onions and chives, add small dollops of mustard on top, and serve immediately.
