Potato Patty with Poached Egg

Ingredients

  • 2 large kale leaves
  • Salt
  • 1 onion
  • 500 g waxy potatoes
  • 5 eggs
  • 40 g flour (2 tbsp)
  • 20 g potato starch (1 tbsp)
  • black pepper (freshly ground)
  • nutmeg
  • 1 tsp butter
  • 50 ml vinegar
  • 0.5 bunch arugula

Instructions

    Wash kale leaves, shake dry, cut off tough stems, slice into strips. Blanch in boiling salted water for 2–3 minutes, then cool and drain well.

    Peel and finely chop onion.

    Peel, wash, grate potatoes finely and squeeze out excess moisture. Mix with onion, kale, 1 egg, flour and starch to form a smooth dough; season with salt, pepper and freshly grated nutmeg. Shape the potato mixture into four patties.

    Heat butter in a pan. Cook patties over medium heat for about 5 minutes until golden brown. Reduce heat and let them finish cooking for another 5 minutes.
