Potato Mash with Wild Garlic Pesto

Ingredients
- 1.5 kg potatoes
- 350 ml milk
- 4 tbsp butter
- Salt
- freshly grated nutmeg
- 125 g wild garlic
- 30 g finely grated Parmesan
- 50 g lightly toasted pine nuts
- 125 ml olive oil
- Salt
- black pepper
Instructions

Wash the potatoes and steam them for about 30 minutes.

Peel the potatoes, press them through a potato masher, add butter and hot milk, and mix with a wooden spoon into a loose mash. Season with salt and nutmeg.

Wash the wild garlic leaves and shake or pat them dry.

Slice the leaves into fine strips. Lightly toast the pine nuts in a dry pan. Roughly chop the toasted nuts with a knife and combine them with the wild garlic strips in a mortar. Grind until finely chopped. Grate the Parmesan finely and add it to bind the mixture.

Add olive oil gradually until the pesto reaches the desired consistency. Season with salt and pepper.

Distribute the mash onto plates and serve with the pesto on top. Garnish with additional wild garlic leaves if desired.
