Ingredients
- 1 kg waxy potatoes
- 1 small tin of saffron (0.1 g)
- 250 ml Whipping Cream
- 3 tbsp butter
- 2 tbsp freshly grated Parmesan (or goat cheese)
- Salt

Wash the potatoes and steam for about 30 minutes until tender. Peel, then press through a potato masher or ricer. Warm the saffron with the cream, then stir in the butter and Parmesan before folding into the mashed potatoes. Season with salt and serve.
