Potato Herring Stew with Spring Onions

A fresh potato herring stew featuring spring onions and dill.
Ingredients
- 500 g small boiled potatoes (from the previous day)
- 1 bunch spring onions
- 4 Bismarck herring fillets (in glass)
- 200 ml white wine vinegar
- 1 tsp mustard seeds
- 1 tbsp sugar
- pepper (ground)
- 1 bunch dill

Peel the potatoes. Trim, wash and cut the spring onions diagonally into thick pieces. Slice the herring into wide strips. Boil the vinegar, 200 ml water, mustard seeds, sugar and pepper; let the spring onions soften in it and cool.

Layer the potatoes and herring in a pot, pour over the spring onion broth. Wash, chop and sprinkle dill on top, cover and let steep for at least one day.
