Ingredients
- 1 kg hard-boiling potatoes
- 4 tbsp olive oil
- Sea salt
- black pepper (freshly ground)
- 2 tbsp lemon juice
- 150 g feta cheese
- 100 g Parma ham (thin slices)
- 2 sprigs thyme
- 2 untreated lemons
Instructions

Preheat the oven to 200°C fan-forced. Wash the potatoes thoroughly, halve or quarter them and spread on a baking tray lined with parchment paper.

Drizzle with olive oil, season with salt and pepper, toss, and bake in the oven for about 30 minutes until golden brown, turning occasionally. Remove from the oven and let cool to lukewarm.

Drizzle with lemon juice and season again with salt and pepper. Gently fold in crumbled feta and ham, then garnish with thyme sprigs and lemon halves before serving (optional: serve in jars).
