Ingredients

  • 2 ripe apples
  • 600 g waxy potatoes
  • 1 vegetable onion
  • 250 g kassler salmon
  • 2 sprigs sage
  • 400 ml heavy cream (at least 30% fat)
  • 3 eggs
  • 70 g freshly grated Gruyère cheese
  • Salt
  • freshly ground pepper
  • nutmeg

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat. Peel and wash the apples and potatoes. Remove the core from the apples and cut them into wedges. Slice the potatoes thinly. Peel the onion and slice it into rings. Cut the kassler into narrow strips. Wash the sage, shake off excess water, pluck the leaves from the stems, and finely chop.

    Mix the potatoes with the apple wedges, kassler strips, sage, and onion rings, then transfer to a buttered baking dish. Whisk together the cream, eggs, and cheese; season with salt, pepper, and nutmeg. Pour 3/4 of this mixture over the gratin so it is partially covered. Bake in the preheated oven for 35-40 minutes until golden brown. Remove from the oven and serve immediately from the dish.
