- 15 potatoes (starchy, preferably uniform size)

Peel 5 potatoes, roughly chop and cook until soft. Grate the remaining 10 potatoes finely and squeeze through a cheesecloth to extract juice. Hold the juice to allow starch to settle at the bottom. Carefully pour off the water and return the starch to the extracted potato juice.

Drain the cooked potatoes and mash into a purée. While still boiling hot, pour the purée over the raw potato mixture, stir thoroughly, then shape into dumplings. Bring a pot of salted water to a boil and drop the dumplings in. Reduce heat and let them cook for about 20 minutes until done. Remove with a slotted spoon.
