- 500 g waxy potatoes
- Salt
- 8 chives
- 1 egg
- 120 g flour
- 20 g starch
- 1 tbsp grated hard cheese (e.g., Bergkäse)

- 2 tbsp butter

Peel, wash, and cook the potatoes in boiling salted water for 25-30 minutes. Drain, let steam off, and press while still hot through a potato masher. Allow the mash to cool completely. Wash the chives, dry, and cut into fine ribbons. Mix the cooled potato mash with the egg, flour, starch, chives, and cheese; season with salt, pepper, and a pinch of nutmeg.

Heat oil and butter in a pan and add one tablespoon of the potato mixture at a time. Press lightly to flatten and fry until golden brown on both sides. Remove the finished potato cakes from the pan and drain on paper towels. Serve in small bowls or arrange on a plate.
