Ingredients

  • 8 slices ciabatta
  • olive oil
  • 4 tbsp medium-hot mustard
  • 8 sage leaves
  • 8 small raw Salsiccia sausages
  • 3 cabbage leaves
  • 1 pinch caraway seeds

Instructions

    Preheat the oven to 220°C (428°F) with upper and lower heat.

    Drizzle the ciabatta slices with a little olive oil and roast in the oven until golden brown. Remove, let cool, then spread mustard on each slice.

    Trim the ends of the sausages slightly, halve the sage leaves, slit the sausages with a knife, and skewer each sausage end with a half sage leaf.

    Heat the remaining olive oil in a pan and slowly sear the sausages all around. Wash the cabbage, dry it, cut into thin strips, blanch briefly, drain, shock in cold water, let drain again, then mix with caraway seeds. Arrange the sausages with the cabbage strips on the breads and serve secured with a wooden skewer.
