Ingredients
- 600 g cooked potatoes
- 1 tsp starch
- 500 g vegetables (e.g., red cabbage or beans)
- 150 g breadcrumbs
- Salt
- Pepper
- spice (e.g., paprika or garlic powder)
- 50 g ground hazelnuts
- 2 tbsp butter
Instructions

Place the cooked potatoes in a tart or baking dish and press them flat with a glass. Sprinkle the starch over them.

Distribute the vegetable leftovers (e.g., red cabbage or beans) on top of the potato layer.

Mix the breadcrumbs with the spices and ground nuts. Melt the butter and stir it in, creating a crumbly consistency. Alternatively drizzle the topping with a little oil.

Evenly sprinkle the breadcrumb mixture over the quiche.

Bake the quiche in a preheated oven at 180 °C (top/bottom heat) for about 20–30 minutes until crisp and golden brown.
