Ingredients

  • 500 g potatoes (firm boiling)
  • 500 g kale
  • 1.2 l Vegetable broth
  • 3 cloves garlic
  • 2 carrots
  • 200 g chorizo (paprika sausage)
  • 0.5 bunch coriander leaves
  • Salt
  • Pepper
  • olive oil

Instructions

    Wash, peel, and dice the potatoes. Peel and finely chop the garlic. Add potatoes and garlic with the broth to a pot and simmer for 20-30 minutes until tender. Peel and dice the carrots. Wash the kale and cut into strips; blanch in boiling water, then drain. Remove the potatoes from the broth with a slotted spoon, place them in a bowl, and mash with a fork or potato masher. Add the kale to the pot with the potatoes. Slice the chorizo thinly, add it as well, and simmer everything for another 10 minutes. Wash, dry shake, and chop the coriander; stir in at the end with salt, pepper, and olive oil, tasting to adjust seasoning.
