Ingredients
- 1 onion
- 2 Garlic cloves
- 1 stalk of leek (cleaned, diced)
- 2 carrots (peeled, finely diced)
- 0.5 red bell pepper (cleaned, diced)
- 0.5 green bell pepper (cleaned, diced)
- 0.5 celery root (peeled, finely diced)
- 100 g green beans (trimmed; cut into pieces)
- 100 g small cauliflower florets
- 3 tbsp olive oil
- 1.5 l beef broth (hot)
- Salt
- Pepper
- 1 Tbsp parsley
- 1 tbsp basil
- 50 g grated Parmesan

Heat the oil in a large pot. Peel and finely chop the onion and garlic. Sauté them in the oil, then add the remaining vegetables. Stir for 3 minutes.

Pour in the hot broth, season with salt and pepper, and cook at high heat for 10 minutes. Before serving, add the herbs, adjust seasoning with salt and pepper, and sprinkle Parmesan on top.
