Ingredients

  • 1 kg pork tenderloin (pre‑trimmed)
  • Salt
  • black pepper (freshly ground)
  • 4 tbsp olive oil
  • 400 g spring onions
  • 1 Garlic clove
  • 1 tsp freshly grated ginger
  • 1 pinch turmeric
  • 0.5 tsp Curry Powder
  • 1 tsp Honey
  • 100 ml dry white wine

Instructions

    Preheat the oven to 160 °C with both fan and top heating.

    Wash, pat dry, season the tenderloin with salt and pepper, then sear in 2 tbsp hot oil on all sides. Place on a rack (under a fat pan) and bake for about 30 minutes.

    Meanwhile, wash and trim spring onions, cut diagonally into rings. Peel and finely chop garlic. In the remaining oil, sauté garlic, spring onions, and ginger slowly for 2–3 minutes. Add turmeric and curry powder, stir briefly, then add honey and deglaze with white wine. Simmer gently for 2–3 minutes, seasoning with salt and pepper.

    Remove the meat from the oven, let it rest briefly, slice into rounds, and serve with the spring onions.
