- 3 small onions
- 2 tbsp clarified butter
- 4 tbsp dry white wine
- 1 cup heavy cream (200 g)
- Salt
- freshly ground pepper
- 8 pork steaks (120 g each)
- smooth parsley for garnish

Peel the onions and slice them into thin rings. Heat 1 tbsp clarified butter in a pan. Add the onion rings and sauté over medium heat until golden brown, stirring occasionally.

Pour in the wine and cream, then reduce gently on low heat. Season with salt and pepper to taste.

Heat the remaining clarified butter in a second pan, sear the steaks on both sides, seasoning them with salt and pepper as you go.

Add the onion sauce to the pan, cover, and let simmer for about 5 minutes more. Divide among four plates and serve garnished with parsley.
