Pork Roast in Herb Crust

- 1 kg pork roast (e.g., loin)
- Salt
- pepper (ground)
- 2 tbsp clarified butter
- 400 ml meat broth
- 8 thyme sprigs
- 5 parsley leaves
- 2 Garlic cloves
- 120 g butter
- 180 g breadcrumbs

Preheat the oven to 200°C with upper and lower heat.

Wash the meat, pat dry, and season with salt and pepper. Heat the clarified butter in a roasting pan and sear the meat on all sides until lightly browned. Pour in the meat broth and cook covered in the preheated oven for 1 hour, turning occasionally.

Meanwhile, remove the leaves from the sprigs and stems and finely chop them. Peel the garlic cloves, press through a press, and mix with the herbs, butter, and breadcrumbs.

After one hour of cooking, place the meat on a sheet of parchment paper, coat it with the herb crust, and bake for another about 30 minutes.
