Ingredients
- 1 kg pork roast (well marbled)
- 1 l milk
- 2 Bay leaves
- 2 tsp dried oregano
- 1 untreated lemon zest (large piece)
- pepper (ground)
- 2 onions
- Salt
- 2 tsp flour
- 3 tbsp olive oil

Add bay leaves, oregano and lemon zest (avoid lemon juice if possible) to the milk. Season well with pepper. Peel one onion, slice into rings and add. Coat the pork roast in the milk marinade and cover; refrigerate overnight. The next day remove the meat, drain and pat dry with kitchen paper.

Season all over with salt and pepper, then dust with flour. Peel the remaining onion and finely chop. Heat oil in a braising pot and brown the pork roast on all sides. Briefly sear the onion cubes. Pour the milk marinade through a sieve over the meat. Reduce heat. Simmer covered over low flame for 60–80 minutes.
