Ingredients

  • 2 Spring Onions
  • 150 g shiitake mushrooms
  • 4 small red chilies
  • 3 Tbsp plant oil
  • 200 ml dry white wine
  • 300 ml Vegetable broth
  • Salt
  • ground pepper
  • 4 veal cutlets

Instructions

    Rinse the spring onions, trim and slice into thin rings. Clean the mushrooms and pat dry; cut large ones into smaller pieces.

    Wash the chilies and sauté them with the spring onions and mushrooms in a pan using 1 tbsp oil. Add white wine and broth, reduce to half, season with salt and pepper.

    Meanwhile wash the veal cutlets, pat dry, season with salt and pepper, then sear both sides in a hot grill pan with the remaining oil.

    Reduce heat and finish cooking the cutlets; plate them with the jus and vegetables and serve.
