Ingredients
- 600 g pork neck
- 1 tsp cumin
- 2 Garlic cloves
- Salt
- freshly ground pepper
- 2 tbsp sweet paprika
- 1 kg firm potatoes
- 2 onions
- 2 tbsp clarified butter
- 2 tbsp vinegar
- 400 ml meat broth
- 800 g peeled tomatoes (1 large can)

Cut the pork into bite‑size cubes. Crush the cumin in a mortar. Peel and finely chop the garlic. Mix the pork with salt, pepper, cumin, garlic and 1 tbsp paprika. Peel, wash and cube the potatoes. Peel and dice the onions.

Heat the clarified butter in a large pot and brown the pork over high heat all around. Add the onions and cook briefly. Sprinkle with the remaining paprika, then pour in vinegar and broth, adding the tomatoes and potatoes. Simmer gently for about 30 minutes, taste, and serve.
