Polish-Style Sauerkraut Soup

Ingredients
- 1 kg pork rib
- 700 g potatoes
- 500 g Sauerkraut
- 4 tbsp butter
- 2 onions
- Salt
- Pepper
- 4 Garlic cloves

Bring the ribs to a boil in about 1 L of salted water, then simmer for 45 minutes over low heat. Remove from the pot. Peel and finely chop the onions. Peel and dice the potatoes. Roughly chop the sauerkraut. Heat 2 tbsp butter in a saucepan, sauté the onions, potatoes, and sauerkraut.

Add the meat broth to the pan and let it simmer for about 25 minutes over low heat, seasoning with salt and pepper. Peel, finely chop the garlic cloves, and add them to the soup.

Meanwhile, brown the ribs on both sides in the remaining butter until crisp, cut between the bones, and serve the sauerkraut soup over the ribs on a plate.
