Spanish-Style Potato Soup with Rioja Wine

Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 1 chili pepper
  • 1 stalk Celery
  • 800 g firm potatoes
  • 2 tbsp olive oil
  • 150 ml Rioja wine
  • 700 ml beef broth
  • 4 sprigs thyme
  • 3 tomatoes
  • 300 g chorizo
  • 1 tbsp capers
  • Salt
  • ground black pepper

    Peel and finely dice the onion and garlic. Wash, trim, and finely chop the chili pepper. Wash, trim, and slice the celery. Peel and dice the potatoes. Sauté the onion, garlic, chili, and celery in hot oil for 1-2 minutes. Deglaze with wine. Add beef broth, potatoes, and thyme to the pot.

    Let simmer gently for about 20 minutes. Meanwhile, blanch the tomatoes in boiling water, shock them, peel, quarter, core, and dice. Add sliced chorizo and capers to the soup and cook for 5-10 minutes. Season with salt and pepper and serve.
