Ingredients

  • 200 g Flour
  • 3 egg yolks
  • 3 tbsp heavy cream
  • 1 tsp Baking powder
  • a pinch of salt
  • 2 tbsp rum
  • flour (for dusting)
  • butter clarified oil (for frying)
  • powdered sugar (for dusting)

Instructions

  1. 1.

Sift the flour and combine with egg yolks, cream, baking powder, salt, and rum to form a smooth, firm dough. On a floured work surface roll it thinly and cut into strips about 3×12 cm using a pastry cutter.

  2. 2.

Make a longitudinal slit in the middle of each strip, pull one end through so that a loop forms. Fry portions in hot clarified butter (about 170 °C) for 2–3 minutes until golden brown. Drain on kitchen paper and dust with powdered sugar before serving.
