- 600 ml whipping cream
- 1 Vanilla bean
- 2 sprigs Mint
- 50 g sugar
- 7 sheets white gelatin

Bring the cream and sugar to a gentle boil. Add the split vanilla bean and one sprig of mint, then simmer gently for about 10 minutes.

Soak the gelatin in cold water. Remove the vanilla bean and mint from the cream. Squeeze out excess liquid from the gelatin and dissolve it into the cream while stirring.
