Poached Eggs

Ingredients
- 1 tbsp butter
- 1 tbsp flour
- 250 ml vegetable broth (instant)
- 100 ml White wine
- 150 g crème fraîche
- 3 tbsp mustard (extra hot)
- Salt
- Pepper
- pinch of sugar
- 5 tbsp white wine vinegar
- 8 eggs
- 2 tbsp chives

Heat the butter for the sauce, sprinkle in the flour while stirring and lightly brown it. Gradually add the broth and white wine under constant stirring, then pour in the remaining liquid and whisk everything into a creamy sauce. Add the crème fraîche and mustard, seasoning with salt, pepper, sugar and 1 tbsp white wine vinegar to taste.

Bring about 2 L of water together with 4 tbsp vinegar to a boil for the poached eggs. Carefully crack each egg into a ladle and gently slide it into the vinegar water. Let the eggs set and lift them out with a skimmer. Place one poached egg on each plate, swirl the mustard sauce around it, and sprinkle chives on top.
