Ingredients

  • 0.5 lemon
  • Sea salt
  • 1 tbsp peppercorns
  • 2 Bay leaves
  • Pepper
  • 8 cod fillets (≈150 g each)

Instructions

    Squeeze the juice of the lemon. Combine with 1 tsp salt, the peppercorns and bay leaves in about 1 l hot water in a pot. Let steep for about 10 minutes.

    Wash the cod fillets, pat dry, place them in the broth at a temperature just below boiling (≈80 °C) and poach covered for 10‑15 minutes. Remove with a slotted spoon and serve with mustard sauce if desired.
