Grilled Swordfish with Marinated Herbs

Ingredients

  • 2 swordfish fillets (180-200 g each)
  • 2 rosemary sprigs
  • 8 thyme sprigs
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • Sea salt
  • freshly ground pepper

Instructions

    Wash swordfish, pat dry.

    Remove rosemary needles and thyme leaves, finely chop.

  3. 3.

    Peel garlic and finely chop. Mix herbs with garlic and olive oil; place fish in mixture. Cover and marinate for about 4 hours. Then season with salt and pepper and grill on medium heat for 3-4 minutes per side, basting occasionally with the remaining marinade.
