Ingredients
- 400 g waxy potatoes
- 1 egg
- 100 g buckwheat flour
- 20 g whole grain semolina (2 tbsp)
- 60 g soft yogurt butter
- 75 g honey
- 0.25 tsp vanilla powder
- 1 pinch salt
- 12 plums
- 70 g whole wheat breadcrumbs
- 0.5 tsp ground cinnamon
Instructions
-
1.
Wash potatoes and boil in water for about 25 minutes until tender. Drain, let cool briefly, peel, and press hot through a potato ricer onto the work surface. Let cool.
-
2.
Add egg, buckwheat flour, semolina, 30 g butter, 4 tbsp honey, vanilla powder, and a pinch of salt to the potatoes and quickly knead into dough. Rest dough for about 20 minutes.
-
3.
Meanwhile wash and pit plums. On a floured surface roll the dough into a ~5 cm thick log, cut into 12 equal slices. Flatten each slice slightly, place one plum on each, and shape into dumplings.
-
4.
Drop dumplings into boiling water and let simmer on low heat for about 15 minutes, turning occasionally.
-
5.
In the meantime melt remaining butter in a pan over medium heat. Fry breadcrumbs until golden brown. Remove from heat and stir in remaining honey and cinnamon.
-
6.
Lift dumplings from water and serve with breadcrumb butter in a bowl.
