Plum Crumb Cake

Ingredients

  • 350 g spelt whole‑grain flour
  • 130 g coconut blossom sugar
  • 50 g unsweetened applesauce
  • 1 egg
  • 210 g butter
  • 1 kg plums
  • 2 tbsp whole‑grain breadcrumbs

Instructions

    Gather 300 g spelt whole‑grain flour on the work surface and make a well in the center. Add 80 g coconut blossom sugar, the egg, applesauce, and 160 g of butter cut into small pieces to the well; use a knife to mix thoroughly. Quickly knead the resulting crumbs together until a smooth dough forms; add more flour if needed. Wrap the dough and refrigerate for 30 minutes.

    Wash, halve, and pit the plums. Roll out the dough on a floured work surface to fit a cake pan plus a 3 cm margin. Line the pan with butter if desired. Prick the dough several times with a fork and sprinkle with breadcrumbs. Arrange the plum halves in a brick‑layer pattern from outside to inside.

    For the crumble, mix 50 g butter with 50 g spelt whole‑grain flour and 50 g coconut blossom sugar; rub by hand into crumbs. Sprinkle over the plums. Bake on the middle rack for about 30 minutes. Remove, let cool slightly, then lift out of the pan and serve in slices.
