Plum Cake

Ingredients

  • 120 g low‑fat quark
  • 2 tbsp milk
  • 4 tbsp Vegetable oil
  • 250 g flour
  • 5 tbsp sugar
  • 0.5 packet Baking powder
  • 1 egg
  • 0.5 packet vanilla pudding mix (for 250 ml liquid)
  • 250 ml milk
  • 2 tbsp sugar
  • powdered sugar (for dusting)
  • 600 g blue plums
  • 400 g sour cream

Instructions

    Knead all dough ingredients together and line a springform pan with parchment paper, lifting the edges to form a rim.

    Whisk the pudding mix with 3 tbsp milk until smooth. In a pot bring the remaining milk and sugar to a boil, then stir in the pudding mixture. Let it simmer, pour into a bowl, and cool while dusting with powdered sugar.

    Preheat the oven to 180 °C (350 °F) with upper and lower heat.

    Wash the plums, quarter them, and pit them.

    Whisk the pudding with sour cream until smooth and adjust sweetness with extra sugar if desired.

    Spread the mixture over the base and press the plums into it. Bake in the preheated oven for 45–50 minutes, covering promptly with buttered parchment paper. Remove the finished cake from the oven, let it cool, release it from the pan, and allow it to cool completely on a wire rack before serving.
