Ingredients

  • 600 g beef tenderloin (center cut)
  • clarified butter (for frying)
  • Salt
  • Pepper (freshly ground)
  • 8 salad leaves
  • 8 tsp tomato sauce
  • 2 cherry tomatoes (cut into 8 thin slices)
  • 8 coriander leaves

Instructions

    Slice the meat into 16 pieces. Warm clarified butter in a pan and sear each steak for about 1 minute per side, remove, season with salt and pepper, then arrange two steaks on each salad leaf.

    Place 1 tsp tomato sauce on each plate and garnish with a cherry tomato slice and a coriander leaf.
