Ingredients
- 4 small plaice (preferably headless)
- 200 g Flour
- 500 g waxy potatoes
- Salt
- Pepper (freshly ground)
- 1 tbsp butter
- 1 handful tarragon leaves (or 1 handful wild garlic, washed and dried)

Peel the potatoes, quarter if needed, and cook in plenty of salted water until tender. Drain and mix with 1 tbsp butter.

Season the plaice with salt and pepper, then coat in flour. Heat 1 tbsp butter in a pan and fry each side for about 2 minutes. In a small saucepan, melt the remaining butter and briefly sauté the tarragon. Plate the potatoes with a plaice on top and sprinkle with tarragon or wild garlic.
