Ingredients
- 8 Matjes fillets (ready to cook)
- 2 onions
- 1 apple (e.g., Boskop)
- 80 g pickled cucumbers
- 1 tbsp stuffed green olives (with paprika)
- Lemon juice
- 250 g mayonnaise
- 2 tbsp pickling liquid
- Salt
- pepper (ground)
- 1 tsp juniper berry

Wash the Matjes fillets and pat them dry.

Peel the onions and slice into thin rings. Wash the apple, quarter it, remove the core, cut the flesh into narrow strips, and drizzle with 1 tbsp lemon juice. Drain the pickled cucumbers, dice finely, and slice the olives into rounds.

Whisk the mayonnaise with the pickling liquid and freshly chopped herbs; season with salt, pepper, and lemon juice. Fold in the cucumber cubes and juniper berries. Arrange the fillets on a plate, top with onion rings, olive slices, and apple strips, then drizzle with the sauce before serving.
