Pizza with Mozzarella and Ricotta

Ingredients
- 10 g fresh yeast
- 400 g flour
- 1 tsp salt
- 200 g mozzarella
- 150 g ricotta
- 100 g Parmesan
- cold pressed olive oil (for drizzling)
- Fleur de sel
- black pepper (from the mill)

For the dough crumble the yeast and dissolve it in 50 ml lukewarm water. Mix the flour with the salt, put it in a bowl, make a well and pour in the yeast mixture. Dust with flour and let rise for 15 minutes. Then add about 150 ml lukewarm water and knead into a smooth dough. Shape into a ball, cover with a cloth and let rise for 1 hour.

Preheat the oven to 250°C (top and bottom heat).

After the rest period knead the dough again vigorously, roll it out on a lightly floured surface and spread it onto a greased baking sheet.

Drain the mozzarella and crumble it by hand. Drain the ricotta as well. Grate the parmesan on a grater. Sprinkle the cheese over the dough, dot with ricotta, drizzle with olive oil and bake in the preheated oven for 20-30 minutes until golden brown.

Remove from the oven, sprinkle with Fleur de Sel and grind pepper from the mill over it.
