Pizza with Lamb Mince

A pizza topped with lamb mince that can be enjoyed by those with type-2 diabetes and elevated blood lipids without worry.

Ingredients

  • 200 g rye flour (Type 1150)
  • 200 g wheat flour (Type 550)
  • Salt
  • 0.5 cube Yeast
  • 200 g goat fresh cheese
  • 2 tbsp milk (3.5% fat)
  • 200 g lamb mince
  • Pepper
  • 20 g almond sticks (2 tbsp)
  • 150 g small radicchio (1 small radicchio)
  • 3 tbsp sultanas
  • 2 tbsp dark balsamic cream

Instructions

    Mix flour types and ½ tsp salt in a bowl, press a well in the center. Break yeast into it.

    Pour 250 ml lukewarm water over it and knead with hand mixer hooks until smooth. Cover dough and let rise in a warm place for about 30 minutes.

    Whisk goat fresh cheese and milk together.

  4. 4.

    Divide pizza dough on floured surface into four portions and roll each into an elongated flatbread (≈25×15 cm).

    Place two flatbreads on one sheet of parchment paper the size of the baking tray. Lay another sheet with pizzas onto the tray.

    Spread the cheese mixture over the pizzas. Tear lamb mince into small pieces and distribute on top. Season with salt and pepper. Sprinkle almond sticks and bake in preheated oven at 225 °C (convection: 200 °C, gas: level 3‑4) on the lowest rack for 15–20 minutes.

    Meanwhile clean radicchio, slice thinly, rinse and dry thoroughly.

    Remove pizzas from oven and lift them with parchment. Place remaining pizzas on another sheet of parchment on the tray. Top and bake as before.

    Distribute radicchio strips and sultanas over finished pizzas, drizzle with balsamic cream and serve immediately.
