Ingredients

  • 600 g firm potatoes
  • Salt
  • 1 onion
  • 2 Boskop apples
  • 200 g Sour Cream
  • 100 g whole milk yogurt
  • pepper (ground)
  • 3 tbsp butter
  • 2 tbsp freshly chopped parsley
  • 8 matjes fillets (marinated in oil)

Instructions

    Wash the potatoes and cook them in boiling salted water for about 25 minutes.

    Peel and finely chop the onion. Peel, quarter, core and finely grate the apples. Mix immediately with sour cream and yogurt. Add the onion and season with salt and pepper.

    Drain the potatoes, peel them, toss them in melted butter and sprinkle with parsley. Arrange the matjes fillets on plates and serve with the sauce.
