Pizza‑Topped Pancakes

Ingredients

  • 2 red bell peppers
  • 100 g salami (thin slices)
  • 300 g flour
  • 3 eggs
  • 100 ml sparkling water
  • 50 ml heavy cream
  • 300 ml milk
  • 1 tsp salt
  • 5 tbsp ajvar
  • 1 tbsp pizza seasoning
  • 3 tbsp oil
  • 40 g grated Parmesan
  • 60 g grated Emmental

Instructions

    Whisk flour and milk until smooth, add the remaining ingredients for the batter, mix into a smooth pancake batter, set aside and let rest for 30 minutes.

    Meanwhile wash, trim, halve, deseed, peel white skin from the bell peppers and dice them.

  3. 3.

    Heat some oil in a pan and cook thin pancakes one by one over medium heat.

  4. 4.

    Flip, sprinkle with cheese, top with salami and pepper cubes, add more cheese. Cover for 1 minute to melt the cheese. Keep the pizza‑pancakes warm at 90 °C in the oven while baking the rest until batter is finished.
