Ingredients

  • 4 egg whites
  • 160 g sugar
  • 2 tbsp vanilla sugar
  • a pinch salt
  • 4 tbsp flour
  • 1 tbsp cocoa powder
  • 75 g ground pistachios
  • 50 g chopped pistachios
  • 50 g dark chocolate (~60% cocoa)
  • 1 tbsp butter

Instructions

    Preheat the oven to 100°C.

    Beat the egg whites with salt until frothy, then gradually whisk in sugar and vanilla sugar until the mixture is glossy and firm. Fold in flour, cocoa powder, and ground pistachios.

    On a parchment-lined baking sheet, pipe or drop spoonfuls (about 4 cm diameter) with a smooth tip. Sprinkle chopped pistachios on top. Dry in the preheated oven for about 4 hours, leaving the door slightly ajar to keep the mixture from darkening; if necessary lower the temperature to 80°C and extend drying time.

    Melt the dark chocolate over a double boiler and stir in butter. Decorate the cookies with this ganache and let them dry again.
