The Pineapple Salad from Spoonsparrow is a fruity-sweet side dish for grilling and tastes refreshingly different.
Ingredients
- 1 pineapple
- 1 stalk lemongrass
- 1 Vanilla bean
- 2 tbsp coconut syrup
- 1 tbsp lime juice
- 2 sprigs Mint

Peel the pineapple, quarter it lengthwise and remove the core. Cut the fruit flesh into pieces. Wash the mint, shake dry, pluck the leaves and cut them into strips. Remove the outer leaves of the lemongrass, trim the ends and finely chop the stalk. Split the vanilla bean lengthwise and scrape out the seeds.

Combine lemongrass with vanilla seeds, coconut syrup and lime juice, then mix into the pineapple pieces. Let everything sit for about 5–10 minutes. Arrange the pineapple salad on plates, sprinkle with mint, garnish with a lime slice and lemongrass, and serve.
