Pineapple Punch

Ingredients

  • 150 g sugar
  • 1 tsp butter
  • 200 g pineapple flesh (fresh or canned)
  • 100 ml pineapple juice
  • 2 tsp black tea
  • 125 ml white rum
  • 50 ml Madeira
  • 1 bottle Muscatel wine (0.7 L)

Instructions

    Steep the tea with 250 ml boiling water and let it steep for 5 minutes.

    Cut pineapple flesh into small cubes.

    Heat butter and sugar in a pot and caramelize until golden brown, then remove from heat. Pour the tea through a sieve into the caramel, add Arrak, Madeira, pineapple juice and wine, stir well and fold in the pineapple cubes. Heat gently while stirring, but do not let it boil. Serve hot.
