A fresh and vibrant salad featuring pineapple, carrots, and a zesty citrus-ginger dressing.
Ingredients
- 2 large carrots
- pineapple
- 1 small head of lettuce
- 1 lemon (juice)
- 2 tsp ginger marmalade
- 2 tbsp oil
- Salt
- some mint leaves for garnish
Instructions

Peel and finely grate the carrots. Peel the pineapple and cut into small pieces. Wash, rinse, and tear the lettuce into bite-sized pieces.

Whisk together lemon juice, ginger marmalade, and oil. Season with a pinch of salt.

Combine pineapple and carrots with the dressing. Fold in the lettuce.
