Fennel Salad

The fennel salad by Spoonsparrow provides a wealth of vital nutrients and is wonderfully aromatic.

Ingredients

  • 50 ml white wine vinegar
  • Salt
  • pepper (from grinder)
  • 100 ml olive oil
  • 1 radicchio
  • 1 handful Arugula
  • 1 Carrot
  • 2 stalks celery
  • 1 bulb fennel

Instructions

    Pour the vinegar into a bowl and season with salt and pepper. While stirring, whisk in the oil until the desired consistency is reached and taste.

    Cut the radicchio stem into wedge shapes and separate into individual leaves. Tear small pieces, wash together with the arugula, then dry by spinning. Peel the carrot and grate it coarsely on a vegetable grater. Wash, trim, and slice the celery into thin strips. Slice the fennel bulb into thin rings after washing and trimming. Combine all prepared salad ingredients with the vinaigrette and serve.
