Pine Nut Crusted Fish Fillet

Ingredients
- 600 g fish fillet (e.g., cod, 4 fillets)
- 1 tsp lemon juice
- 1 onion
- 1 red chili pepper
- parsley
- 3 Garlic cloves
- 2 tsp butter
- 40 g pine nuts
- Salt
- Pepper
- 1 tbsp flour
- 2 tbsp olive oil
Instructions

Rinse the fish fillets under cold water, pat dry and drizzle with lemon juice.

Peel and finely chop the onion. Wash, deseed and slice the chili pepper into rings. Wash parsley, shake off excess water, pluck leaves and finely chop. Peel garlic cloves and slice thinly.

Heat 1 tsp butter in a pan, add pine nuts and toast for ½ minute over medium heat. Add onions, garlic and chili and sauté for 2–3 minutes until translucent. Stir in parsley and set aside.

Season fish fillets with salt and pepper and dredge both sides in flour. Heat olive oil with remaining butter in a non‑stick pan. Fry the fillets on each side over medium heat for 5–6 minutes.

Remove the fillets and serve them on preheated plates with the pine nut mixture together.
