Beef medallions wrapped in bacon and cooked to perfection, a classic European steak dish from Spoonsparrow!
Ingredients
- 4 beef medallions (about 80 g each)
- 2 tbsp olive oil
- Pepper (freshly ground)
- Salt
- 4 slices breakfast bacon

Preheat the oven to 200°C with fan and top heat.

Rub the beef medallions all over with olive oil. Season with pepper and salt, then wrap each with a slice of bacon. Tie with kitchen twine and shape into a tight bundle.

Heat 1-2 tbsp oil in a hot, oven‑proof pan and sear the medallions on medium heat for 3–4 minutes until browned. Flip and cook another 3–4 minutes. Turn to brown the sides and the bacon evenly for 3–4 minutes.

Return the medallions to the flat side of the pan and finish cooking in the oven on the middle rack, about 4–10 minutes depending on desired doneness.

Remove the kitchen twine and serve immediately.
