Ingredients
- 150 g ground almond kernels
- 50 g chopped pine nuts
- 1 pinch of salt
- 200 g sugar
- 0.5 tsp lemon zest
- 2 egg whites
- 150 g pine nuts

Preheat the oven to 180°C (350°F) fan-forced. Mix the almonds with the chopped pine nuts, salt, sugar and lemon zest in a bowl. Whip the egg whites until stiff and fold them into the nut mixture.

Use a tablespoon to scoop small portions onto muffin paper liners, gently press the pine nuts on top, and bake in the preheated oven for 10-15 minutes. Remove and let cool.
