Ingredients

  • 200 g spelt flour
  • 125 g butter
  • 1 egg
  • 1 tsp salt
  • 200 g turkey bacon
  • 1 onion
  • 250 g Mushrooms
  • 4 eggs
  • 150 ml milk
  • 250 ml whipping cream (at least 30% fat)
  • 100 g crème fraîche
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 75 g grated Gruyère cheese

Instructions

    Knead spelt flour, butter, egg and salt into a shortcrust pastry, wrap the dough in cling film and chill for 30 minutes. Then roll out on a floured surface and line a quiche tin, shaping a rim. Preheat oven to 180 °C (fan 160 °C; gas 2–3).

    Cut turkey bacon into small cubes. Peel and finely chop onion. Clean mushrooms and slice them. Fry the bacon in a pan without extra fat until crisp, then remove and drain on paper towels.

    Sauté the mushrooms in the bacon fat, add onions and cook briefly. Remove from pan and let cool. Whisk eggs with milk, cream, crème fraîche, salt, pepper, nutmeg, cheese, mushroom mixture and bacon. Pour into tin.

    Bake the quiche in the preheated oven for about 50–60 minutes until golden brown. Let it rest briefly, release from tin and serve cut into pieces.
