The Pilaw from Spoonsparrow impresses with a spicy flavor and bright yellow color!
Ingredients
- 400 g long-grain rice
- 1 onion
- 1 Garlic clove
- 60 g Butter
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 100 g peas (frozen; thawed)
- 80 g raisins
- 80 g cashew nuts
- 0.75 l vegetable broth
- Salt
- 1 clove of nutmeg
- 1 bay leaf

Rinse the rice in a sieve with cold water, then drain. Peel and finely dice the onion and garlic.

Melt 30 g butter in a pot over high heat, then sauté the onion and garlic for about 2 minutes. Add curry and turmeric, stir briefly. Add rice, peas, raisins, and cashews; cook until translucent for about 2 minutes. Pour in broth, season with salt, nutmeg, and bay leaf. Simmer covered on low heat for about 15 minutes, stirring occasionally.

Remove the whole spices. Stir in the remaining butter into the finished rice. Pilaw can be served as a side to meat, fish, or vegetables.
