One-Pot Pasta

Ingredients

  • 1 Red Onion
  • 1 Garlic clove
  • 1 Zucchini
  • 1 Broccoli
  • 500 g whole wheat penne
  • 1 l vegetable broth
  • 4 tbsp cream cheese
  • 5 g basil (0.25 bunch)
  • 50 g sun‑dried tomatoes
  • 100 g Feta
  • Salt
  • Pepper

Instructions

    Peel and slice the onion and garlic into thin rings or slices. Clean and wash the zucchini and broccoli. Halve the zucchini and cut into slices. Break the broccoli into florets.

    Add the onion, garlic, zucchini, broccoli florets, and pasta to a pot. Pour in the vegetable broth and bring to a vigorous boil. Add the cream cheese and reduce heat. Simmer for another 7–8 minutes until the pasta is al dente, stirring occasionally.

    Meanwhile wash the basil, shake dry, and roughly chop it. Slice the sun‑dried tomatoes into strips and crumble the feta. Add everything to the pot with the pasta and mix well. Season with salt and pepper. Divide the one‑pot pasta among four plates and serve.
