Pickled Cod

Ingredients
- 800 g cod fillet
- 3 tbsp Flour
- 6 tbsp oil
- 300 g fennel
- 2 light green bell peppers
- 1-2 red chili peppers
- limes
- 4 Tbsp lime juice
- 250 ml white wine vinegar
- 1 tsp fennel seeds
- salt, freshly ground pepper
- sugar

Wash the cod fillet and cut into bite-sized pieces. Salt, dust with flour, and fry portions in 4 tbsp oil until golden. Let cool. Wash, trim, and slice fennel thinly; remove core and reserve greens. Halve bell peppers and chilies, deseed, and cut into rings.

Slice limes. In remaining oil, sauté fennel slices, pepper rings, and lime wedges sequentially, then let cool. Layer cod, chili rings, and fennel greens in a jar.

Heat lime juice, white wine vinegar, fennel seeds, and 125 ml water; season with salt, pepper, and a touch of sugar. Pour over the prepared ingredients once cooled. Marinate for at least 8 hours. Drain fish into an aluminum bowl, seal tightly.
