Pickled Cheese

Pickled cheese from Spoonsparrow is a great recipe for the next delicious snack time.
Ingredients
- 2 stalks basil
- 2 stalks Parsley
- 2 sprigs Rosemary
- 1 sprig thyme
- 200 g feta (sheep and goat milk)
- 1 tbsp chili flakes
- 100 g goat cheese roll
- 3 cloves garlic
- 200 g Harzer cheese
- 3 bay leaves
- 2 red onions
- olive oil (cold pressed)
Instructions

Wash herbs, shake dry, pluck leaves and chop individually. Drain the feta, cut into cubes, and place in a jar. Sprinkle with basil and chili flakes.

Slice the goat cheese roll and add to another jar. Peel and mince garlic, then add rosemary and thyme.

Fill a third jar with Harzer cheese. Peel onions and slice into rings. Add bay leaves and juniper berries to the cheese.

Top jars with olive oil, swirl several times to mix well. Let rest in a dark, cool place for about one week. Serve pickled cheese as a snack or give it as a gift.
